Bagna Caoda

Bagna Caoda is the Piedmontese dish par excellence. It’s a “sughetto caldo” or warm sauce made from olive oil, garlic, and anchovies to which you add various vegetables such as cardoons, peppers (the famous peppers of Carmagnola are perfect), Jerusalem artichokes, and/or cabbage.
